Sourdough Home can both heat and cool. A foldable fermentation box cannot cool, meaning it cannot lower the temperature of its contents below room temperature. For example, even if a fermentation box has a temperature range of 21-49°C, if the room temperature is 25°C, it cannot reduce the contents to 21°C. Sourdough Home is smaller, specifically designed for sourdough starters, and can accommodate up to a 1-liter jar.
The health and growth rate of your sourdough starter are greatly influenced by your feeding schedule (frequency) and temperature. With Sourdough Home, you can maintain your starter at a constant temperature year-round without adjusting the ratios or feeding schedule.
Refrigerator temperatures are around 3°C, which is too cold for the yeast and bacteria in the starter. Using Sourdough Home to store your starter is the perfect solution. By keeping the starter cool but not cold, you can slow down fermentation without stopping it completely. Your starter will stay healthy and ready to use at any time without additional feeding.
With Sourdough Home, you can create a feeding schedule that suits your starter. Feed once daily, every three days, or even once a week. Precise control over a wide temperature range allows you to manage your starter's fermentation rate like never before and control when the starter reaches its peak.

The time required depends on two factors - the amount of starter and the temperature difference between the starter and the set temperature of Sourdough Home. To shorten the time it takes for the starter to reach the desired temperature, mix it with water close to the set temperature of Sourdough Home.
We recommend using a probe thermometer inserted directly into the starter to measure its temperature after it has been in the device for several hours. We do not recommend placing a room thermometer inside Sourdough Home.
The kitchen countertop is a good choice. Just make sure to keep it away from locations with extreme temperature changes, such as near the oven, and avoid direct sunlight. Leave a few inches of space around the back vent to ensure adequate airflow.
