Fine Grated Radish and Sudachi Soba
【 Ingredients 】 (1 serving)
- Frozen Soba Noodles / 1 serving (160g)
- Grated Daikon Radish / 60g
- Mentsuyu (Shiitake Mushroom & Konbu Dashi / Undiluted) / 80ml
- Radish Sprouts / As needed
- Sudachi (or Lime) / 1/2 to 1 fruit
【 Preparation 】
- Pour the grated daikon radish into the included ice cube tray, cover, and freeze until solid.
- Chill the mentsuyu in the refrigerator.
【 Instructions 】
- Heat the frozen soba noodles in the microwave according to the package instructions. Immediately immerse in cold water to cool quickly, then drain thoroughly and arrange on a plate.
- Place the frozen grated daikon ice cubes into a shaved ice machine. Gently and evenly shave the daikon ice over the soba noodles.
- Garnish with radish sprouts and sliced sudachi. Finally, drizzle the chilled mentsuyu in a circular motion and squeeze sudachi juice over it before serving.
【 Tips 】
- Make sure to freeze the grated daikon radish for at least 24 hours until it is completely solid before shaving.
