Cranberry Cupcakes

Ingredients <24 pieces>

【Main ingredients】

  • Unsalted butter / 50g
  • Whole egg liquid / 110g
  • Brown sugar / 50g
  • Light cream / 50g
  • Low gluten flour / 110g
  • Dried cranberries / 20g
  • Baking powder / 4g

【Decorations】

  • Strawberry sesame oil / a little
  • Sweet cream / 100g

      【 Preparation】

      1. Melt unsalted butter in a pot of insulated water and set aside.

      2. Chop dried cranberries and set aside.

      【Method】

      1. Beat the sweet cream first and set aside.

      2. Mix the whipped sweet cream and strawberry sesame oil and set aside.

      【Cake recipe】

      1. Mix whole egg liquid, brown sugar and light cream until the sugar dissolves.

      2. Add sifted flour and mix well.

      3. Add butter solution and dried cranberries and mix well.

      4. Cover with plastic wrap and let rest for about 30 minutes.

      5. Put the batter into a piping bag.

      6. Pour the batter into the cupcake plate, cover and bake for 3.5 minutes.

      7. Top with sweetened cream according to personal preference or enjoy as is.
