Nut and Maple Syrup Egg Waffles

Ingredients (Approx. 4 servings)

  • 200ml Egg Waffle Batter
    • 70g Cake flour
    • 15g Tapioca starch
    • 5g Custard powder
    • 2.5g Baking powder
    • 50g Sugar
    • 1 Egg
    • 60ml Water
    • 2 small cups Evaporated milk
    • 10g Unsalted butter
    • A few drops Vanilla extract
    • 1g Salt (optional)
  • 1 tbsp Oats
  • 2 tbsp Water
  • 4 tbsp Nuts (almonds, walnuts, etc.)
  • 2 tbsp Maple syrup (or honey)

Instructions

  1. Prepare the egg waffle batter by sifting together cake flour, tapioca starch, baking powder, and custard powder.
  2. Add sugar and salt.
  3. Mix in egg, evaporated milk, melted butter, and vanilla extract. Stir well, then gradually add water while mixing.
  4. Sift the batter again and refrigerate for at least 30 minutes.
  5. Mix oats with water in a microwave-safe bowl. Without covering, microwave (600W) for about 50 seconds.
  6. Add the prepared oats from step 5 into the egg waffle batter.
  7. Attach the egg waffle plate and turn on the power.
  8. When the preheat light (green) turns on, open the machine and pour in about 50ml of batter.
  9. Hold both handles and spread the batter evenly across the plate. Cover the bottom plate completely but avoid overfilling.
  10. Close the lid and lock the handles. After about 10 seconds, flip the machine over. Tilt the machine about 45 degrees on all sides for about 2 seconds each to distribute the batter evenly.
  11. After tilting, unlock and cook for about 3-4 minutes.
  12. When done, open the machine with the logo side facing up and remove the waffles using wooden chopsticks.
  13. Toast nuts in a pan over low heat until fragrant.
  14. Plate the oat egg waffles, sprinkle with toasted nuts, and drizzle with maple syrup.

※Original flavor egg waffles are also delicious with this topping.

* You may open the machine during cooking to check doneness and adjust cooking time.
** If making another batch, wait 3-4 minutes for the machine to reheat before adding more batter.
*** To add chocolate chips: pour half the batter into the bottom plate, add chocolate chips, then cover with remaining batter.
