Japanese Mentaiko Soy Milk Soup Udon

【Main ingredients】

  • Frozen Udon / 1
  • Mentaiko / 1 item
  • Sugar-free soy milk / 400ml
  • Raw edible eggs / 1
  • Kale / 1 slice (shredded)

          【Method】

          1. Use a knife to cut the outer layer of the mentaiko film lengthwise, scrape out the mentaiko particles with the back of a knife or a spoon and set aside. Separate the egg whites and yolks.

          2. Boil the udon in boiling water and set aside.

          3. Add soy milk to the pot, bring to a boil over low heat and add seasonings. Add the egg whites and half of the mentaiko, mix well, and add the udon back into the soup base.

          4. Add the remaining mentaiko, top with shredded kale and egg yolk for decoration, mix well.

          【Tips】

          ・Want to add more Japanese flavor? For seasoning, add 1 teaspoon miso; use shredded nori instead of kale.
          ・Boil the udon in hot water first before adding the soup base to avoid the soup base having a snowy taste.
