Pineapple cake

【Main ingredients】

  • Low-gluten flour / 80g
  • High-gluten flour / 20g
  • Powdered sugar / 25g
  • Cheese powder / 5g
  • Milk powder / 5g
  • Unsalted butter / 50g
  • Whole eggs / 30g


          • Fresh pineapple / 680g
          • Brown sugar / 150g
          • Lemon(juiced) / 1/2 pieces
          • Maltose / 50g


          1. Let the butter soften at room temperature, add powdered sugar and stir evenly.

          2. Add cheese powder and milk powder and mix well.

          3. Add whole eggs in portions and mix well.

          4. Add flour in two batches and mix evenly, wrap it in plastic wrap and put it in the refrigerator for 30 minutes.

          5. Divide into 8 equal portions, each portion is about 25 grams.

          6. Divide the pineapple filling into 8 portions, each portion is about 30 grams. Wrap the dough with the filling, arrange it in the mold, and place it on a dual-purpose baking sheet.

          7. Place in the oven and bake at 170 degrees for about 10 minutes. Turn the bottom upside down and bake for about 13 minutes.

          【How to prepare stuffing】

          1. Cut half of the pulp into cubes and set aside, and use a blender to blend the other half into puree.

          2. Add brown sugar, add lemon juice and mix well.

          3. Pour into the pan, cook over medium-low heat, stirring occasionally, until the bubbles from the pineapple juice begin to diminish. Add maltose, stirring occasionally, until the pineapple begins to dry up. Let cool and then store in the refrigerator.
