Chicken Parmesan Spaghetti

Ingredients<Serves 2>

【Main ingredients】

  • Chicken breast (or chicken thigh instead) / 6 pieces
  • Egg (beaten into egg juice) / 1
  • Tomato sauce or pasta sauce / 2 cups
  • Shredded cheese / 1 cup
  • Breadcrumbs / 1½ cup
  • Parmesan cheese (grated) / 6 tablespoons
  • Olive oil / 4 tablespoons

【Spices (grind with FinaMill electric spice grinder)】

  • Oregano / 1 tablespoon
  • Basil / ½ teaspoon
  • Thyme / ½ teaspoon
  • Garlic / ½ tsp


1. Preheat the oven to 175 degrees and spray a little oil on the baking sheet.

2. Take a small bowl and mix the eggs evenly.

3. Using the FinaMill electric spice grinder, grind the spices into smaller pieces for added aroma and flavor and take another bowl and mix them with the bread crumbs and 2 tablespoons of Parmesan cheese.

4. Dip the chicken breasts into the egg mixture, allowing any excess egg to drip back into the bowl. Coat each chicken breast with the breadcrumb mixture, shaking off any excess mixture. Repeat the above steps, dipping each chicken breast twice into the egg mixture and bread crumb mixture, then place it in the prepared baking pan and spray the chicken breasts with oil.

5. Bake in the oven for 40 minutes, take out and pour tomato sauce on each chicken breast, top with grated cheese and remaining Parmesan cheese. Return to the oven and continue baking until the inside of the chicken is no longer pink and the cheese has melted, then bake for another 15 minutes. Insert a meat thermometer into the center of the chicken and it will read 75°C.

6. If you like, you can add freshly ground black pepper and serve with spaghetti.
