Stuffed Eggplant Rolls

Ingredients<Serves 2>

【Main ingredients】

  • Eggplant / 1 piece
  • Olive oil / appropriate amount
  • Minced pork or vegetables (used as stuffing for stuffed eggplant) / appropriate amount

【Spices (grind with FinaMill electric spice grinder)】

  • Salt/appropriate amount
  • Cumin seeds / Appropriate amount
  • Chili flakes/ Appropriate amount


1. Cut the eggplant into long strips 4 to 6 mm thick.

2. Brush with olive oil, salt and cumin seeds ground with FinaMill electric spice grinder.

3. Fry each side with olive oil for 3 minutes until soft and lightly browned. Place on kitchen paper and set aside.

4. Spread filling generously on eggplant, roll up and secure with toothpicks. The filling can be minced pork cooked with garlic and seasoned with salt and pepper, or stir-fried mixed vegetables, sprinkled with sesame seeds, and seasoned with light soy sauce and oyster sauce.

5. Finally, sprinkle again with freshly ground seasonings and serve!
