Soy Sauce Koji

【Main ingredients】

  • Rice koji / 200g
  • Cold water / 100ml
  • Japanese soy sauce / 250ml


          1. Clean the container thoroughly and sterilize it by immersing it in steam or boiling water.

          2. Put rice koji, cold boiled water and soy sauce in a container and mix well.

          3. The time is 4 days and the temperature is set to 42℃.

          4. When finished, store in the refrigerator.


          ・You may not know that food pickled with soy sauce koji or salt koji is fermented and becomes softer and easier to absorb, reducing the burden on the stomach and making it easier for the body to absorb the nutrients!
