English Scones With Grapefruit Sour Cream

Ingredients<Serves 2>

【Main ingredients】

  • (A) Low-gluten flour / 200g
  • (A) High-gluten flour / 50g
  • (A) Baking powder / 10g
  • (A) Unsalted butter / 50g
  • (A) Brown sugar / 10g
  • (A) Salt / 3g
  • (B) Whole eggs / 55g
  • (B) Water / 20g
  • (B) Sour cream / 45g
  • (B) Grapefruit honey / 50g


          1. Sift the powder and mix well with sugar and salt.

          2. Add butter and mix the butter and flour completely with your hands until it resembles bread crumbs.

          3. Add (B) and mix well. Be careful not to over mix.

          4. Mix well, wrap with plastic wrap, and refrigerate for 30 minutes.

          5. Press the dough into 2cm thick with your hands, cut it into equal parts with a mold, and place it on the baking sheet.

          6. Spread egg wash on top and bake in preheated oven at 180℃ for about 15 to 20 minutes.
