Ginger Cookies

Ingredients<Serves 2>

【Main ingredients】

  • Flour /2 cups
  • Baking powder / 2 teaspoons
  • Cinnamon powder / 1 teaspoon
  • Cocoa powder / 1/2 teaspoon
  • Granulated sugar / 1 cup
  • Vegetable oil / 2/3 cup
  • Egg / 1
  • Honey/ 1/4 cup
  • Fresh minced ginger/ 1/2 teaspoon
  • Candied ginger/ 1/2 cup
  • Sugar granules/ 1/4 cup

【Spices (grind with FinaMill electric spice grinder)】

  • Dried ginger /1 tbsp
  • Cardamom / 1/2 teaspoon
  • Black pepper/1/2 teaspoon
  • Salt/1/4 teaspoon

【Method】

1. Preheat the oven to 180 degrees Celsius and line a baking sheet with butter paper.

2. In a large bowl, stir together flour, baking powder, cinnamon and cocoa powder. Grind black pepper, dry ginger, salt and cardamom using a FinaMill electric spice grinder and add to flour mixture.

3. In another large bowl, combine the sugar and vegetable oil, add the eggs, freshly minced ginger and molasses and beat until smooth. Add the flour mixture in a few additions until well combined, then add the candied ginger.

4. Knead the dough into 2.5 cm balls, roll them in the sugar granules, and place them on the baking sheet. Bake for 8 to 10 minutes.

5. Let the cookies cool on the baking sheet for 3-5 minutes, then transfer to a wire rack to cool.
