Strawberry Cheese Tart

Ingredients <4 pieces>

【Main ingredients】

  • Unsalted butter/35g
  • Salt/1g
  • Frosting/25g
  • Whole eggs/10g
  • Cheese powder / 5g
  • Low gluten flour/70g

【Cheese filling】

  • Cream cheese / 80g
  • Sugar/25g
  • Light cream / 55g
  • lemon juice / 1 teaspoon
  • Fish gelatin/2.5g
  • Frozen strawberry puree/30g


  • Frozen strawberry puree / appropriate amount
  • Fresh fruit/appropriate amount

        【How to make cheese filling】

        1. Let the cream cheese soften at room temperature, mix well with the sugar, and beat until the sugar dissolves. Then add light cream and lemon juice and mix well.

        2. Soak the isinglass flakes in cold boiled water until soft, then mix with strawberry puree in insulated water until completely dissolved. Finally pour in the cheese cream and mix well.


        【How to make tart crust】

        1. Let unsalted butter soften at room temperature. Then beat butter, salt and icing sugar until smooth.

        2. Add the egg liquid in portions and mix well.

        3. Add cheese powder and mix well.

        4. Add sifted flour and mix well to form a dough.

        5. Wrap the dough in plastic wrap and refrigerate for about 15 minutes.

        6. Divide the dough into 4 equal parts and roll it into the size of the baking mold.

        7. Place the dough on the tartelette plate, cover with lid, bake for 4 minutes, take out and let cool.

        8. Pour the cheese batter into the cooled tart shell, and place it in the regular compartment of the refrigerator to refrigerate for more than an hour.

        9. Before eating, you can add appropriate amount of frozen strawberry puree and fruit to the cheese tart noodles for decoration.
