Mango Madeleine

Ingredients <24 pieces>

【Main ingredients】

  • Unsalted butter / 340g
  • Whole egg liquid / 30g
  • Brown sugar / 35g
  • Salt / 1g
  • Frozen mango puree / 45g
  • Baking powder / 2g
  • Low gluten flour / 90g
  • Water / 10g

【Stuffing】

  • Dried mango/appropriate amount

        【Method】

        1. Heat unsalted butter in a pot of water until it melts and set aside.

        2. Mix whole egg liquid, brown sugar, salt, mango puree and water until the sugar dissolves.

        3. Add sifted flour and mix well.

        4. Add melted unsalted butter and mix well, then cover with plastic wrap and let rest for about 30 minutes.

        5. Put the batter into a piping bag.

        6. Cut the dried mango into small pieces.

        7. Pour a little into the Madeleine, put the dried mango on top, then squeeze the batter to cover the dried mango.

        8. Cover and bake for 3 minutes.
