Purple Sweet Potato Cup Cake

【Main ingredients】

  • Unsalted butter / 50g
  • Whole egg liquid / 110g
  • Brown sugar / 50g
  • Fresh milk / 50g
  • Low gluten flour / 90g
  • Natural purple sweet potato powder / 18g
  • Baking powder / 4g


  • Fresh purple sweet potato puree / 100g
  • Light cream / 50g


      1. After the purple sweet potato is cooked, take 100 grams of purple sweet potato and press it into puree.

      2. Add light cream and mix thoroughly.

      【Cake recipe】

      1. Melt unsalted butter in a pot of insulated water and set aside.

      2. Mix whole egg liquid, brown sugar and fresh milk until the sugar dissolves.

      3. Add natural purple sweet potato powder and mix well.

      4. Add sifted cake flour and baking powder.

      5. Add butter solution and mix well.

      6. Cover with plastic wrap and let rest for about 30 minutes.

      7. Put the batter into a piping bag.

      8. Pour the batter into the donut plate, cover and bake for 3.5 minutes.

      9. Top with purple sweet potato cream according to personal preference or enjoy as is.
