Red Quinoa Bagels

Ingredients<Serves 2>

【Main ingredients】

  • High-gluten flour / 200g
  • Low gluten flour / 50g
  • Red quinoa flour / 25g
  • Grape natural yeast original species / 80g
  • Brown sugar / 10g
  • Sea ​​salt / 2g
  • Water / about 150g
  • Unsalted butter / 10g

          [Boiled dough and sugar water ingredients]

          • Water / 1000ml
          • Brown sugar / 2 tbsp

          【Method】

          1. Mix all ingredients (A) (except butter) and knead until smooth.

          2. Add butter and knead until it forms a thin film, roll it into a round shape, cover and ferment until doubled in size.

          3. Press the dough lightly to remove air bubbles, divide into 6 equal parts, and rest for 10 minutes.

          4. Shape the dough into an oval, then roll it into an olive shape, then roll it into a length of about 30cm, flatten one end with a pin, connect the head and tail, wrap the flattened end and pinch the tail tightly, and finally ferment to about double the size. \

          5. Boil the sugar water until it boils, put the dough into the boiling sugar water, cook for 10 seconds on each side, take out the dough and put it directly into the baking pan.

          6. Place in preheated oven at 200 degrees and bake for about 15-20 minutes.

          【Tips】

          ・Pulse red quinoa into powder using a grinder.
