Clams with White Wine and Lemon

Ingredients<Serves 2>

【Main ingredients】

  • Big clam/sand white / 1 to 1.5 kg
  • Butter / 20g
  • Garlic / 3 petals (grind for later use)
  • Liquor / 100ml
  • Light cream / 100ml
  • Lemon juice / half teaspoon
  • Limoncello (optional) / 1 teaspoon
  • Fresh Diao Cao / a little


          1. Melt the butter in a large pot, add minced garlic and stir-fry evenly.

          2. Pour in white wine and cook over medium heat until the alcohol evaporates. Add the clams and bring to a boil. Close the lid and cook for about 4 minutes until the clams open.

          3. Add lemon juice/limoncello, pour in the cream, bring to a boil over low heat, then turn off the heat, add Diao Cao and serve.
