Red Wine Poached Pear

Ingredients<Serves 2>

【Main ingredients】

  • Pears / 2-4 pieces
  • Wine / 500ml
  • Lemon / Half (lemon peel + lemon juice)
  • Cinnamon / 1 item
  • Star anise / 2 capsules
  • Cloves / 1 teaspoon (optional)


1. Add red wine and seasonings to a small pot, bring to a boil over medium heat, then reduce to low heat and simmer for 15 minutes to release the flavour.

2. Peel and core the pear, apply lemon juice to prevent oxidation; add the red wine from step 1 and cook over low heat for 20 minutes.

3. Flip the pears and continue to cook on low heat for 20 minutes until the surface is colored; turn off the heat and bake for 20 minutes (turn over again halfway through).

4. Refrigerate the dish overnight, heat the red wine sauce over medium heat until it thickens, then serve with the noodles.


・Don’t peel orange and lemon peels to the white flesh, otherwise they will taste bitter.
・Do not stew pears over high heat to avoid overcooking the flesh.
