Chocolate Hazelnut Madeleines

Ingredients <24 pieces>

【Main ingredients】

  • Black chocolate slices / 10g
  • Unsalted butter / 40g
  • Whole egg liquid / 30g
  • Sanwen sugar / 25g
  • Fresh milk / 65g
  • Baking powder / 2g
  • Unsweetened cocoa powder / 10g
  • Low gluten flour / 80g
  • Hazelnut spread / appropriate amount


  • Icing sugar / a little


        1. Melt unsalted butter and black chocolate in a kettle of hot water and set aside.

        2. Mix whole egg liquid, three-temperature sugar and fresh milk until the sugar dissolves.

        3. Add sifted flour and mix well.

        4. Add the melted butter chocolate solution and mix well.

        5. Cover with plastic wrap and let rest for about 30 minutes.

        6. Put the batter into a piping bag.

        7. Pour a little batter into the Madeleine plate, then pour an appropriate amount of hazelnut paste, and then pipe batter on the surface to cover the hazelnut paste. Cover and bake for 3 minutes.
