Matcha Lava Cake

Ingredients <4 pieces>

【Main ingredients】

  • Low-gluten flour / 60 g
  • Unsalted butter / 120 g
  • White chocolate / 160 g
  • Matcha powder / 12 g
  • Frosting / 20 g
  • Whole egg / 1
  • Yolk / 2 pieces
  • Salt / 1 g


          • Icing sugar / 2 tsp


          1. First, add butter and white chocolate to hot water until dissolved, mix well.

          2. Add whole eggs and egg yolks to the icing sugar and beat evenly, then mix into the chocolate solution.

          3. Sift in the low-gluten flour and matcha powder and mix well.

          4. Lightly grease the baking cup with butter and sprinkle with flour to facilitate unmoulding.

          5. Pour an appropriate amount of batter into the baking cup.

          6. Place on a square wire rack and bake at 200 degrees for 8 minutes.

          7. Invert the soft center and mold it onto a plate, sprinkle with appropriate amount of icing sugar for decoration and serve.


          ・If the white chocolate used is too sweet, or you need to make a less sweet version, the icing sugar can be omitted.
          ・It is best to enjoy it while it is hot. The liquid will turn solid after cooling.
          Use bamboo skewers as long as possible. After placing them on the baking sheet, the ingredients will not sink and bake out more evenly.
