Miso Soup

【Main ingredients】
- White miso / 2 tablespoons
- Water / two bowls
- Tofu / one box (cut into pieces)
- Kelp / appropriate amount
【Method】
1. When the water boils, add the kombu and tofu cubes.
2. When the water boils again, add white miso and cook for a while.
【Method】
・Miso can be divided into red miso and white miso, mainly based on the length of the ripening period.
・White miso is more commonly used in Hong Kong and Taiwan, with a shorter fermentation period, lower salt content, and a lighter and sweeter taste; red miso has a longer maturation period, is reddish brown, has higher salt content, is salty, and has a strong bean flavor. The two can also be mixed when making miso soup to create a unique flavor.
