Mini Winter Melon Soup With Morels

Ingredients<Serves 2>

【Main ingredients】

  • Small winter melon / 1
  • Morels / 6 capsules (soaked)
  • Mushroom / 20g (soaked and cut into cubes)
  • Chicken / 50g (cut into pieces)
  • Win melon / 20g (cut into pieces)
  • Winter melon / 30g (cut into pieces)
  • Shrimp / 4 only
  • Night scented flower / a little

【Chicken marinade】

  • Lee Kum Kee Special Fresh Mushroom Noodles / 1/4 teaspoon
  • Corn flour / 1/4 teaspoon

【Chicken marinade】

  • Lee Kum Kee Special Fresh Mushroom Noodles / 1/4 teaspoon
  • Lee Kum Kee Pure Stone Ground Sesame Oil / a little
  • Corn flour / 1/4 teaspoon

【Soup】

  • Lee Kum Kee Special Fresh Mushroom Powder/2 tsp water/400ml

【Method】

1. Remove the heads and shells of the shrimps, leave the tails open and devein the shrimps, mix well with marinade and set aside; mix the chicken cubes with marinade and set aside.

2. Cut the small winter melon in half, use an iron spoon to dig out the melon sac, leaving about 1 inch of melon flesh, do not dig through.

3. Boil a pot of hot water, simmer the chicken cubes, boil the morels, mushrooms, and winter melon cubes, then put them into a melon bowl.

4. Heat 400 ml of water, add Lee Kum Kee Special Fresh Mushroom Powder and bring to a boil. Pour into the melon cup and steam over high heat for about 45 minutes.

5. Boil a pot of hot water and simmer the shrimp and melon seeds, put them into the stewed melon bowl, and garnish with night scented flowers.
