White Curry Pork Chop With Rice
Ingredients<Serves 2>
【Main ingredients】
- Chicken wings / 8 only
- Lemongrass / 1 branch (chopped)
- Lemon leaves / 3 slices (chopped)
- Sesame oil / 1 teaspoon
- Sugar / 1 teaspoon
- Fish sauce / 1 tablespoon
- Soy sauce / 1 tablespoon
- Minced garlic / 1 piece (cut into pieces)
- Red onion / 1 piece (chopped)
【Sauce】
- Lemon leaves / 4 pieces (chopped)
- Lemongrass / 1 piece (cut into sections and smashed)
- Shallots / 1 piece (chopped)
- Minced garlic / 1 piece (cut into pieces)
- White curry powder / 1.5 tbsp
- Chicken soup / 250ml
- Coconut milk / 150ml
- Cornstarch / about 1/2 tablespoon (mix into cornstarch water)
- Fish sauce / 1 tablespoon
- Brown sugar / 1 teaspoon
- Chili pepper / 1/2 strips (diced)
【Method】
1. After washing the chicken wings, put all the seasoning ingredients and chicken wings into a dense bag. Use both hands to spread the spices evenly on the surface of the chicken wings through the food bag and marinate for at least an hour.
2. Preheat the air fryer to 180 degrees for 2 minutes. Place the lemongrass chicken wings in the air fryer, spray a little oil on the surface of the chicken wings, and air fry at 180 degrees for 10 minutes. Pick up and invert, and then fry at 190 degrees. Air fry for 8 minutes. If you want the surface to be crispier, air fry at 200 degrees for 2 more minutes on each side.
3. Add oil, add chopped shallots and garlic, add lemongrass and stir-fry, then add white curry powder and stir-fry over low heat until fragrant, then add clear chicken soup, then add lemon leaves, cook over low heat for 15 minutes After a few minutes, add coconut milk, fish sauce and sugar to taste. You can add chili peppers to taste to your preferred spiciness, and add cornstarch water.
4. Put lemongrass chicken wings in white curry sauce, top with chopped green onions and fried garlic.
