Octopus and Edamame Brown Rice

【 Ingredients 】(Serves 4)

  • Brown rice / 2 cups
  • Octopus / 100g
  • Edamame (pre-cooked) / 60g
  • Daikon radish / 50g
  • Ginger / 1 knob
  • Mirin / 3 tablespoons
  • Sake / 2 tablespoons
  • Japanese dashi (white broth) / 1 tablespoon
  • Salt / 1 teaspoon
  • Water / as needed (seasonings + water should total ~450ml)

【 Instructions 】

1. Rinse the brown rice and soak for at least 2 hours. Drain and let sit for 30 minutes.

2. Cut daikon into ~5cm squares and slice ginger thinly.

3. Add all ingredients (except edamame), seasonings, and water to a pot. Mix lightly and cover with a lid.

4. Heat over medium-high [MED]. When boiling, reduce to medium [MED] or low [LOW] heat and simmer for 45 minutes.

5. Turn off heat after 45 minutes. Let steam for 15 minutes before opening the lid. Stir well.

6. Garnish with pre-cooked edamame before serving.
