Grilled Pork with Vegetables
【 Ingredients 】(Serves 2–3)
- Thick-cut pork belly / 500g
- Zucchini / to taste
- Small cucumbers / to taste
- Red bell pepper / to taste
- Yellow bell pepper / to taste
- Salt / to taste
- Black pepper / to taste
- Lettuce leaves / to taste
- Perilla leaves (shiso) / to taste
- Dipping sauce / to taste
- Kimchi / to taste
- Lime / to taste
【 Instructions 】
1. Lightly season the pork belly with salt and black pepper. Cut zucchini and cucumbers into ~3cm thick slices, then halve them. Quarter the bell peppers.
2. Preheat a grill pan over medium [MED] heat. Arrange the pork belly, zucchini, cucumbers, and bell peppers on the pan.
3. Grill all ingredients, turning occasionally, until golden brown on all sides.
4. Use kitchen tongs and scissors to cut the pork belly into bite-sized pieces.
5. Serve the sliced pork, kimchi, dipping sauce, and grilled vegetables wrapped in lettuce and perilla leaves.
