Cheesy Stir-Fried Rice Cakes (Tteokbokki)

【 Ingredients 】(Serves 4)

  • Rice cakes (tteok) / 500g
  • Cheese / 1 slice (e.g., American or mozzarella)
  • Napa cabbage / 70g (sliced)
  • Asparagus / 3 spears (halved lengthwise)
  • Soft-boiled egg / 1
  • Chili pepper / ½ (sliced)

【 Seasoning (★) 】

  • Water / 200ml
  • Gochujang (Korean chili paste) / 2 tablespoons
  • Gochugaru (Korean chili flakes) / ½ teaspoon
  • Sugar / 1 tablespoon
  • Ketchup / 2 tablespoons
  • Soy sauce / 2 teaspoons
  • Chicken bouillon powder / 1 tablespoon
  • Minced garlic / 1 tablespoon

【 Instructions 】

1. Place a pan over medium heat [MED]. Add all ★ seasoning ingredients and stir continuously until the mixture comes to a gentle simmer.

2. Once the sauce is simmering evenly, add the rice cakes and napa cabbage. Cook for 8–10 minutes, stirring occasionally.

3. Add the asparagus and cheese (torn into small pieces). When the cheese begins to melt, top with the halved soft-boiled egg and sliced chili pepper.
