  • Bacon, Lettuce and Tomato Soup

    Ingredients<Serves 4>

    【Main ingredients】

    • Tomatoes + cherries (diced) / about 500g
    • Romaine lettuce (shredded) / 100g
    • Bacon cubes / 80g
    • Onion (diced) / 1 small
    • Chicken soup / 500ml
    • Light cream / 50ml
    • Flour / 45g
    • Eggplant paste / 1 tablespoon
    • Sugar / 1 tablespoon
    • Fresh fennel (chopped) / 1 tablespoon
    • Oregano / 1 teaspoon
    • Crushed red pepper / 1/4 teaspoon
    • Salt / appropriate amount
    • Black pepper / appropriate amount

      【Method】

      1. Place bacon cubes in a cold pan, fry over medium-low heat until fragrant and drain out the fat, scoop up one-third of it for decoration. Add onions and sauté until golden brown, add eggplant paste and sauté for 1-2 minutes until fragrant.

      2. Pour in diced tomatoes, shredded lettuce, and sugar and stir-fry for about 2 minutes. Add flour and stir-fry quickly until it forms a paste.

      3. Add chicken stock, parsley, oregano, crushed red pepper, and black pepper and stir-fry evenly. Bring to a boil, cover with lid, reduce heat and simmer for about 10 minutes, stirring occasionally.

      4. Stir in light cream. Taste and season as needed. Garnish with a little bacon bits, shredded lettuce, extra light cream, and herbs, and serve.
