Watercress and Pork Sandwich
Ingredients (for 2 servings)
- Square sliced bread (cut into 8 slices) - 2 slices
- Watercress - a handful
- Red onion (small) - 1/4
- Pork tenderloin slices - 150g
- Cheese powder - 1 tablespoon
- Black pepper - to taste
- Flour - 2 tablespoons
- Garlic - 1 clove
- Mayonnaise - 1 tablespoon
- Balsamic vinegar - 1/2 teaspoon
- Lemon juice - 1/4 teaspoon
- Salad oil - as needed
Instructions
- Remove the tough stems from the watercress, and slice the red onion and garlic.
- In a bowl, mix mayonnaise, balsamic vinegar, and lemon juice, then set aside.
- Combine the cheese powder and flour, then season the pork tenderloin slices with black pepper and evenly coat them with the cheese powder and flour mixture.
- Place the bread slices into the toaster and toast until the outside is crispy (toast mode for 2.5–3.5 minutes).
- Meanwhile, heat a small amount of salad oil in a frying pan, add the garlic slices, and sauté over low heat until fragrant. Then, increase to medium heat and fry the pork slices, being careful not to burn the garlic. Cook the pork until fully done.
- Take out the toasted bread, spread butter in the middle, and layer the fried pork slices, red onion, and watercress. Finally, drizzle the sauce from step 2 over the top.
Cooking Time: Approximately 20 minutes.
This pork tenderloin toast, paired with refreshing watercress and a sweet-and-sour sauce, offers a rich texture and is perfect for a quick lunch or light meal.
