Fresh jam toast

Ingredients (for 2 people)
- Whole wheat toast (cut into 6 slices) 2 slices
- 200g strawberries
- 80g sucrose (approximately 40% of strawberry weight)
- 1/3 lemon
- Cream 10g

- Wash the strawberries, drain and wipe them clean, then remove the stems (measure the weight of the strawberries at this point).
- Stir the strawberries, cane sugar and lemon juice into the pot and let it sit for 30 minutes to overnight to allow the strawberries to release their moisture.
- Turn up the heat and heat the strawberry mixture in the pot, forcing out excess water.
- After the mixture comes to a boil, turn to medium heat, carefully remove any impurities, and simmer slowly until it reaches the desired consistency.
- Put the toast into the toaster and bake until crispy (toast mode, bake for 2.5 to 3.5 minutes), then spread with cream and then the cooked strawberry jam.

- The amount of sucrose used is about 40% of the weight of strawberries.
- For pots, you can choose enamel pots or stainless steel pots to prevent sticking or reactions.
