Fresh jam toast

  • Whole wheat toast (cut into 6 slices) 2 slices
  • 200g strawberries
  • 80g sucrose (approximately 40% of strawberry weight)
  • 1/3 lemon
  • Cream 10g

practice

  1. Wash the strawberries, drain and wipe them clean, then remove the stems (measure the weight of the strawberries at this point).
  2. Stir the strawberries, cane sugar and lemon juice into the pot and let it sit for 30 minutes to overnight to allow the strawberries to release their moisture.
  3. Turn up the heat and heat the strawberry mixture in the pot, forcing out excess water.
  4. After the mixture comes to a boil, turn to medium heat, carefully remove any impurities, and simmer slowly until it reaches the desired consistency.
  5. Put the toast into the toaster and bake until crispy (toast mode, bake for 2.5 to 3.5 minutes), then spread with cream and then the cooked strawberry jam.
