French savory pie

Material (diameter 19cm)
<Pie crust>
- Unsalted butter: 100g
- Low gluten flour: 150g
- Egg yolk: 12 grams
A seasoning
- Water: 2 tablespoons
- Granulated sugar: 4 grams
- Salt: 2 grams
<ingredients>
- Onion: 1/2
- Bacon slices: 2 pieces (20g)
- Ham slices: 2 pieces (20g)
- Gouda cheese: 30 grams
- Olive oil: 1 tablespoon
<Egg liquid>
- Fresh cream (45%): 200ml
- Milk: 60ml
- Eggs: 2 (100g)
- Salt: 1/3 teaspoon
- White pepper: a little
- Nutmeg: a little

Prepare
- Bring the cream to room temperature and sift in the cake flour.
Instructions (preparation time: about 90 minutes)
- Put seasoning A into a bowl and mix well, then add the egg yolk and mix further.
- Place the room temperature cream in another bowl and stir with a rubber spatula until smooth. Add the sifted cake flour and mix.

- Gradually add batter 1 to 2 portions at a time and mix.
- Wrap step 3 in plastic wrap, roll it out to 2mm thick with a rolling pin, and refrigerate for at least 6 hours. Preheat the oven to 210°C and time for 30 minutes (preheating time: about 10 minutes).
- Place step 4 on a floured surface and roll out to 5mm thickness.
- Place step 5 on top of the mold and press with your fingers so the dough adheres. Use your fingers to shape the protruding dough from the mold to make a mold.
- Place aluminum foil on top of the dough, place a pie stone on top and bake in an oven preheated to 210°C for 30 minutes.
- Cut bacon and ham into 1mm cubes, cut Gouda cheese into 5mm cubes, and chop onions. Add olive oil to the skillet and fry until golden brown.
- Tip : Gruyere is a common cheese, but this time I used Gouda cheese. Please enjoy pairing with your favorite cheese.
- Put the egg mixture ingredients into a bowl and stir evenly.
- After the pie crust is baked, take it out to cool. Preheat the oven to 200°C again and time for 25 minutes (preheating time: about 10 minutes).
- Spread the ingredients from step 8 onto the cooled pie crust, then pour in the egg mixture from step 9. Bake in an oven preheated to 200°C for 25 minutes.
