Cookie Ice Cream Sandwich

Materials (3 pieces)
- Unsalted butter (room temperature) 60g
- 3 tablespoons sucrose
- 1 egg yolk
- 120g whole wheat flour
- 1/2 teaspoon baking powder
- 2 tablespoons milk
- A little bit of rock salt
- Vanilla ice cream 180ml
Instructions (preparation time: about 30 minutes)
- Preheat the oven : Preheat the oven to 180°C and set the baking time to 18 minutes (preheating time is about 10 minutes).

Make the butter-sugar mixture : Beat room temperature unsalted butter until creamy, then add cane sugar and continue mixing.

Add egg yolk and dry ingredients : Add egg yolk to step 2 and mix well. Add whole wheat flour, baking powder and milk and mix with a rubber spatula until a smooth dough forms.

Shape into biscuits : Divide the dough evenly into 6 portions, roll each portion into a round biscuit shape about 6 cm in diameter, place on a baking sheet, and sprinkle with rock salt. Tip: You can use a fork to score a rough texture on the surface of the biscuit, which will make it more delicious when baked.

Bake : Place the baking sheet into the lower shelf of an oven preheated to 180°C and bake for 18 minutes.
- Cooling : Once baked, place the cookies on a wire rack to cool.
- Sandwich ice cream : After the cookies have cooled, sandwich the vanilla ice cream between two cookies to create ice cream sandwich cookies.
