Delicious pudding


Ingredients (for 4 people)

caramel

  • 30 grams of granulated sugar
  • 1 teaspoon water

pudding

  • 40g granulated sugar
  • milk 150ml
  • 3 eggs
  • 2 egg yolks
  • 4 drops vanilla essence
  • Fresh cream and fruits can be added according to personal preference

Instructions (preparation time: about 60 minutes)

  1. Heating the milk : Heat the milk to 60°C.
  2. Heating water : Heat water to 60°C.
  3. Preheat the oven : Preheat the oven to 160°C and set the baking time to 40 minutes (preheat for about 10 minutes).
  4. Make the caramel :
    • Place the granulated sugar in a small saucepan over medium heat.
    • When edges begin to brown, stir with a wooden spatula.
    • When steam appears, turn off the heat, add 1 teaspoon of water, stir well, then pour the caramel into the pudding mold.
  5. Make the pudding :
    • Place sugar, whole eggs, egg yolks and vanilla extract in a bowl and stir until no foam forms.
  6. Add milk : Slowly add warm milk and continue stirring until there is no foam.
  7. Strain : Strain mixture into pudding cups and cover loosely with aluminum foil.
  8. Water bath baking :
    • Place the pudding mold into a deep heat-proof container and add hot water to 1/3 of the way up the deep container.
    • Place the container on the lower rack of the oven and bake for about 40 minutes.
  9. Check the pudding for doneness : After baking, if the surface of the pudding is springy and a fork can be inserted, it is ready to be removed.
  10. Chill : Chill the pudding in the refrigerator for 2 to 3 hours.
  11. Decoration : After unmoulding, you can add fresh cream or fruit decoration according to your preference, and enjoy.
