corn soup
Ingredients (for 2 people)
- Canned corn: 1 can (180g)
- Onion: 1/2
- Water: 3 tablespoons
- Milk: 100ml
- Salt: 1/3 teaspoon
- White pepper: a little
- Cream: 5g
- Basil leaves: appropriate amount
- Fresh cream: appropriate amount
<Bread cubes (according to personal preference)>
- Square bread (cut into 10 slices): 1 slice
- Olive oil: 1 teaspoon
Instructions (preparation time: about 20 minutes)
- Peel the onion and cut into bite-size pieces.
- Place the onions and water in a heat-proof container, cover with plastic wrap, and heat in the microwave. (Manual mode 600W 8 minutes)
- Place the milk, creamed corn, salt, and white pepper in another heatproof container, cover with plastic wrap, and heat in the microwave. (Use milk drinking mode)
- Put the ingredients from step 2 into a blender and beat into a paste, then add step 3 and cream and blend until smooth.
- Strain the mixture from step 4 through a fine mesh sieve.
- Pour soup into bowls and sprinkle with basil leaves and crème fraîche. Serve with croutons or baguette if preferred.
