corn soup


Ingredients (for 2 people)

  • Canned corn: 1 can (180g)
  • Onion: 1/2
  • Water: 3 tablespoons
  • Milk: 100ml
  • Salt: 1/3 teaspoon
  • White pepper: a little
  • Cream: 5g
  • Basil leaves: appropriate amount
  • Fresh cream: appropriate amount

<Bread cubes (according to personal preference)>

  • Square bread (cut into 10 slices): 1 slice
  • Olive oil: 1 teaspoon

Instructions (preparation time: about 20 minutes)

  1. Peel the onion and cut into bite-size pieces.
  2. Place the onions and water in a heat-proof container, cover with plastic wrap, and heat in the microwave. (Manual mode 600W 8 minutes)
  3. Place the milk, creamed corn, salt, and white pepper in another heatproof container, cover with plastic wrap, and heat in the microwave. (Use milk drinking mode)
  4. Put the ingredients from step 2 into a blender and beat into a paste, then add step 3 and cream and blend until smooth.
  5. Strain the mixture from step 4 through a fine mesh sieve.
  6. Pour soup into bowls and sprinkle with basil leaves and crème fraîche. Serve with croutons or baguette if preferred.
