Ingredients (15cm cake)

<cheese dough>

  • Fresh cream cheese: 200g
  • Sour cream: 90g
  • Granulated sugar: 75g

A seasoning

  • Egg: 1
  • Egg yolk: 1
  • Fresh cream (35%): 2 teaspoons
  • Vanilla essence: 5 drops
  • Lemon juice: 1 tablespoon
  • Cake flour: 1 tablespoon

<Cookie Dough>

  • Cream biscuits: 70g
  • Unsalted butter: 30g

Instructions (preparation time: about 90 minutes)

  1. Bring the cream cheese to room temperature.
  2. Put the butter biscuits into a plastic bag, crush them with a rolling pin, and mix with the unsalted butter.
  3. Place the cookie dough from step 2 into a cake pan lined with baking paper and press with your fingers to spread it evenly.
  4. Preheat the oven to 180°C and set the baking time to 35-40 minutes. (Preheating time: about 10 minutes)
  5. Place the cream cheese and sour cream in a bowl and mix well with a mixer, then add the granulated sugar and mix.
  6. Put ingredients A into another bowl and mix well.
  7. Add Seasoning A a little at a time to the cheese mixture in step 5 and mix well. Once mixed add lemon juice and mix again.
  8. Sprinkle in the cake flour and mix well to avoid lumps.
  9. Pour the batter from step 8 into the cake mold and smooth the surface with a rubber spatula.
  10. Place the cake mold on the deep plate provided and bake at 180°C for 35 to 40 minutes. When a bamboo skewer is inserted into the dough and it does not stick to your hands, it means it is baked.
    Tip : You can adjust the baking time according to the color. If the cake browns easily, cover it with aluminum foil halfway through baking.
  11. After the cake has cooled, place it in the refrigerator and it's done.
