Mochi Chocolate Cookies
Ingredients <16 pieces>
【Main ingredients】
- Unsalted butter / 60g
- Sugar / 50g
- Salt / 5g
- Egg yolk / 1 egg
- Light cream / 70g
- Low gluten flour / 165g
- Cocoa powder / 10g
- Baking powder / 1g
- Chocolate nuggets / 40g
【Stuffing】
- Glutinous rice flour / 65g
- Corn flour / 10g
- Caster sugar / 10g
- Milk / 70g
- Light cream / 70g
- Unsalted butter / 10g
【How to make mochi filling】
1. Mix glutinous rice flour, corn flour and caster sugar.
2. Add milk and light cream, stir until there is no powder and the sugar is dissolved.
3. Steam for 20 minutes.
4. Add butter, mix well with a spatula to form a ball, wrap it in plastic wrap, and put it in the refrigerator until ready.
【How to make cookies】
1. Add sugar and salt to the unsalted butter solution, beat with an electric egg beater until the sugar is dissolved and thickened.
2. Add egg yolk.
3. Add light cream in several batches and beat until it has a soft texture.
4. Sift in low-gluten flour, cocoa powder, baking powder, and chocolate granules and mix well.
5. Take out the dough from the refrigerator and divide it into 16 equal portions (each portion is about 13g).
6. Wrap one portion of filling into each portion of cookie dough, sealing downwards.
7. Place on butter paper and flatten slightly.
8. Place in the air fryer and bake at 180 degrees for about 18 to 20 minutes.
