Air Fried Pigeon

Ingredients <2 pieces>

【Main ingredients】

  • Squab / 2
  • Ginger slices / 2 slices
  • Soju / 1 tablespoon

【Marinage】

  • Brine juice / 300ml
  • Water / 900ml
  • Onion / 1 piece
  • Ginger slices / 3 slices
  • Rose water / 1 teaspoon
  • Rock sugar / 1 piece

【Squab Crispy Sauce】

  • Honey (use maltose to make it crispier) / 1 tablespoon
  • White vinegar / 1 tablespoon
  • Water / 2 tablespoons

          【Method】

          1. Wash the squab and remove the lungs and set aside.

          2. Boil boiling water, add ginger and soju, add squab water for 3 minutes and set aside.

          3. Use ginger slices and onions to make a wok, then pour in the brine juice and water, bring to a boil, then add rock sugar and rose water, bring to a boil, then turn down the heat, then add the squab and simmer for 5 minutes, then turn off the heat and cover Cover and soak the squab for 1 hour, then reverse and soak for another 1 hour. (Soak the cooked squab in hot water. If you want it to be more flavorful, you can soak it overnight)

          4. The next day, pick up the squab, let it cool and air-dry for about two hours, then stir the squab crispy sauce evenly, and evenly apply the squab, preferably twice, and then air-dry for more than 3 hours. (The surface of the squab is dried well, and the effect is better when air-fried)

          5. Preheat the air fryer to 180 degrees for 2 minutes, place the squab in the air fryer, and air fry at 180 degrees for 10 minutes. Pick up and invert, then air fry at 180 degrees for 5 minutes. The fragrant air fried squab is ready.
