Orange Madeleine

Ingredients <24 pieces>

【Main ingredients】

  • Unsalted butter / 40g
  • Whole egg liquid / 30g
  • Sanwen sugar / 30g
  • Salt / 1g
  • Fresh orange juice / 45g
  • Baking powder / 2g
  • Low gluten flour / 90g
  • Orange peel / 2 tsp


        1. Heat unsalted butter in a pot of water until it melts and set aside.

        2. Mix whole egg liquid, three-temperature sugar, salt, and fresh orange juice until the sugar dissolves.

        3. Add sifted flour and mix well.

        4. Add orange peel and mix well.

        5. Add melted unsalted butter, mix well, cover with plastic wrap and let rest for about 30 minutes.

        6. Put the batter into a piping bag.

        7. Pour into the madeleine plate, cover and bake for 3 minutes.
