Chicken Wonton Soup

Ingredients<Serves 2>

【Main ingredients】

  • Free range chicken / 1
  • Jinhua ham / 30g
  • Baby cabbage / 2 trees
  • Ready-made wontons / 1 dozen
  • Ginger / 4 pieces
  • Onion / 2 trees
  • Salt / a little
  • Water / 1.8 liters


          1. Remove the head, tail and feet from the free-range chicken, then wash it. Boil the water and add ginger and green onion. Drain it into ice water and put it in a cold river. Set aside. Cut Jinhua ham into shreds. Tear and cut baby cabbage into pieces. Wash and set aside. .

          2. Boil another pot of water (1.8L). When the water boils, add the chicken and Jinhua ham. Boil for 15 minutes, then reduce heat and simmer for 1 hour.

          3. Add the baby cabbage and cook for 15 minutes, add salt, then add the wontons and cook until they boil.


          ・I reserve the chicken fat in the noodle soup, and then add the baby cabbage and cook together until it has a chicken flavor. If you are worried that it will be too oily, you can remove the chicken fat.
          ・I used lean meat before and the taste was relatively bland; this time I used Jinhua ham and it has a richer taste.
