Wheat Germ Toast

Ingredients<Serves 3>

【Main ingredients】

  • High-gluten flour / 300g
  • wheat germ / 15g
  • Grape natural yeast original species / 80g
  • Brown sugar / 15g
  • Salt / 3g
  • Fresh milk / 100g
  • Water / 110g
  • Unsalted butter / 20g


          1. Mix all ingredients (except butter) and knead until smooth.

          2. Add butter and knead until it forms a thin film, roll it into a round ball and cover, let it ferment until doubled in size.

          3. Press the dough lightly to release air bubbles and let it rest for 15 minutes.

          4. Roll into an oval shape, roll up gently and let rest for 10 minutes.

          5. Unroll and roll it up again, put it into the toast mold, and finally ferment until it is 8 to 9 minutes full.

          6. Bake in preheated oven at 200 degrees for about 35 to 40 minutes.


          ・The activity of natural yeast directly affects the length of fermentation time.
          Add the liquid part all at once, keep 20 to 30g first, and then add or subtract depending on the situation.
