Cocoa Coffee Financier

Ingredients <8 pieces>

【Main ingredients】

  • Unsalted butter / 65g
  • Egg white / 70g
  • Low gluten flour / 28g
  • Unsweetened cocoa powder / 7g
  • Extra strong instant coffee powder / 5g
  • Powdered sugar / 55g
  • Almond flour / 50g
  • Baking powder / 1g


    1. Make caramelized butter: Put unsalted butter into a pot and heat over medium-low heat until the butter turns brown and has sediment. Remove from the heat. Soak the pot in cold water to cool down quickly, and then use a strainer to separate it. Remove the sediment and set aside.

    2. Sift almond flour, powdered sugar, cocoa powder, coffee powder, baking powder and cake flour, put them into a plate and mix evenly.

    3. Pour the egg whites into the container and beat with a whisk until slightly foamy.

    4. Pour the powder from step (2) into the egg whites in two batches and mix evenly.

    5. Finally add the caramelized butter solution and mix evenly until it forms a smooth batter.

    6. Preheat the waffle maker, pour batter into the waffle iron until it is full, cover and bake for 3-4 minutes.
